Every bag is 250g and carries the log from its own roast: the temperature it went in at, when we heard first crack, when it came out, and how much of the roast happened after. Choose whole bean or tell us your brewer in the basket and we will grind it on the morning it is packed.

Roasting
Four numbers, written down every time
Every batch is logged by hand on the wall behind the drum, and the same four numbers go on the bag. They are the whole recipe. If a coffee tastes different from the last bag you had, the log will tell you why.

The drum temperature the green beans go in at. Higher for espresso, lower for a delicate natural.
Turning point

The moment the beans stop cooling the drum and start taking heat back. Everything after this is ours to control.
First crack
9:12
Water leaves the bean and it splits audibly. This is the one you listen for, and the one the shop is named after.
Drop
11:40
Out of the drum and into the cooling tray. The gap between crack and drop, as a share of the roast, is the DTR.

Roaster’s choice from whatever is best on the shelf that week, posted on the Thursday. Whole bean only, because a subscription that sits in a cupboard for a fortnight is better off unground. Pause or stop any time, no notice.
